Today I made some soup today as part of my quest to create tasty Vitamix weight loss recipes.
I woke up today at an uber encouraging 297.8 pounds. A little over 4 pounds lighter then I was on day one of this diet. Obviously I won’t incur these results every day, but this was encouraging, especially for day 1.
I had two meal replacement drinks yesterday. The banana/yogurt/flaxseed/steel cut oat smoothie and fruit and green smoothie that I have yet to name. Here is the recipe.
Vitamix weight loss recipes - Cream of Asparagus Soup:
- A bunch of asparagus
- some leaves of kale
- one cup unsweetened almond milk
- 2 cups low sodium/low fat chicken stock
- 1/2 cup white vinegar
- Worcestershire sauce to taste
- A tablespoon of chili powder
- 1/5th tablesoon of cayenne pepper
- 2 tablespoons garlic powder
- 7 baby portobello mushrooms
- A whole white onion
Add the first 9 ingredients to the Vitamix blender. Blend at variable speed, slowly increasing the speed to the highest level. Let it blend for a minute or so.
Now remove the stems from the mushrooms and chop the large white onion into 4 sections. Throw the mushrooms and onion pieces in the blender. Select variable speed and blend the mixture at level 4 for 30-45 seconds. This will chop the onions and mushrooms nicely. Use the plunger tool to force the vegetables down if need be.
Transfer the soup into a saucepan and let it simmer on the oven for 45 minutes. Let refrigerate overnight. I ate this for lunch the next day.
Trust me, it tastes better then it looks.
