Add this tangy marinade to your collection of vitamix weight loss recipes

Whenever I use the BBQ, I prefer to use a straight charcoal grill. I prefer the taste of food cooked with charcoal, and I like the process of lighting the coals with my charcoal chimney. Some people in my condo building don’t like the smell of the coals and are always complaining, so I recently purchased a Weber Q200 gas Grill for my balcony. Now I can still grill, and add to my library of Vitamix weight loss recipes.

I couldn’t wait to BBQ some healthy grilled chicken, so I came up with a little marinade in the vitamix blender and will now share some of these vitamix weight loss recipes with you.

Marinade:

  • 3 Tablespoons of Dijon Mustard
  • Juice of whole lemon
  • 1 cup of low sodium/low fat chicken stock
  • 1 teaspoon of pure honey

Throw all the ingredients in the vitamix blender. Start blending slowly, then increase the speed to high. Blend for 30 seconds, then coat the chicken with the mixture. I let my chicken marinate for 4 hours, but in a perfect world it would marinate over night.

I served this chicken with some sliced sweet potato. It doesn’t really fall under the category of vitamix weight loss recipes since the vitamix blender is not used, but here is the recipe anyway.

Slice 1 inch thick pieces of sweet potato and throw them in a mixing bowl. Add one tablespoon of olive oil, salt (to taste), pepper (to taste) and a teaspoon of agave nectar. Toss the potatoes so they are evenly coated with the mixture. Transfer potatoes to the grill. The agave nectar allows the potatoes to get a nice caramelized, crunchy texture. Enjoy!
