I have incorporated a lot of salads into my diet lately. We all know that salads are healthy, but most of the time the nutritional value of a salad is negated by the globs of creamy/oily dressing we slather into our leafy green treats lunches.
My salads recently have been pretty basic. They include baby spinach, some tomatoes, some sliced bell peppers, and whatever other vegetable strikes my fancy. For dressing, I have just been using vinegars, NOT vinaigrette; balsamic, red, white, etc. It gets the job done but can get a little monotonous at times. I love ranch dressing, so I decided to craft a low calorie version of the classic ranch dressing recipe. I did spice it up a bit, however, to add some additional flavor. I am pretty happy with the way this turned out, so it is being stored in my collection of vitamix weight loss recipes.
- 1 small clove of Garlic
- Salt To Taste
- Pepper To Taste
- 1/4 cup parsley
- 1/4 cup dill
- 2 Tablespoons Fresh Chives
- 1 1/2 cup non fat greek yogurt
- 1/8 cup white vinegar
- 1/8 cup of Franks Red Hot (optional, this is what makes the recipe “Bitchin’”)
Dump all ingredients into your vitamix blender in no specific order. Blend at medium speed for 20-30 seconds.
That’s it! Now you have a delicous, flavorful and low calorie salad dressing to add to your list of vitamix weight loss recipes. Enjoy!
