Strawberry Yogurt chicken marinade – Vitamix recipes for weight loss

I love greek yogurt. It’s really, really good and I add it to a lot of my vitamix recipes for weight loss.

I am also a fan of yogurt sauces and marinades, and I am a bigger fan of the salty/sweet flavor profile.

I had some strawberries that were nearing the end of their lifespan, and I had an idea. I wanted to make a Yogurt marinade/dressing with strawberries and balsamic vinegar, and that is exactly what I did. Here is the recipe:

MARINADE:

  • 1 Cup non fat greek yogurt
  • 1/4 cup balsamic vinegar
  • 1/4 cup water
  • 8 ounce package of strawberries
  • Salt/Pepper to taste

Nothing complicated here – blend all the ingredients together in your Vitamix blender starting on low, and ending on high, for about a minute.

This was enough sauce to marinate 3 pretty hunky chicken breasts. I let them marinate overnight. I decided I wanted a little crunch with this meal, so when I was ready to cook the chicken I made a crushed almond mixture to throw on top of the chicken while it baked.

ALMOND TOPPING (for 3 chicken breasts):

  • 1 cup of almonds slivers
  • dash of salt
  • 8 red peppercorns (I did this more for photo esthetics, but it turned out tasting pretty nice)

You can throw this in your Vitamix, but I had already cleaned mine and didn’t feel like sullying it up again, so I used the magic bullet I have lying around for this particular task. It was a better tool for the job and quick and easy to clean. You can certainly use your Vitamix blender, however.

I preheated my oven to 375 degrees, coated the pan with some olive oil, placed the chicken breasts in a cast iron skillet (my cooking vessel of choice) and let the chicken cook for about 25 minutes. Here is how it looked when it went into the oven (note: in this instance, I was only cooking one chicken breast).

See those pink peppercorns? Yum. Next time I think I will sub out olive oil for coconut oil and see how that tastes.

You should be able to use a traditional baking pan instead of a cast iron skillet, so don’t let that throw you off.
